Hello everyone! Today I want to share with you top three spice mix for Nigerian cooking.
Jollof rice spice; I am yet to see a person that doesn’t eat jollof rice in Nigeria, it is our staple meal. Do you know that you can take your jollof rice to a whole new level? O yes you can! This is my recipe for that spice mix that creates mouth-watering rice
- 6 to 7 bird’s eye pepper
- 2 tbspn black pepper
- 1½ tbspn paprika
- 5 to 6 bay leaves
- 1 tbspn each garlic, ginger, and dried thyme leaves.
Blend all spices together
Curry powder is a very popular spice in Nigeria. The curry powder is a mixture of different spices that can be used for cooking rice, beans, soups, curry sauce, and almost every meal. The homemade curry powder tastes a lot better than store bought, and you have the option of choosing your own spices. I’ve shared a tutorial with all the spices and exact measurements, click here to see my curry powder tutorial.
Pepper mix this spice mix can be used mainly for our cooking our Nigerian soups. It is simply put together by combining; dried pepper with crayfish, paprika, and ginger. Add more pepper if you like very spicy soup, or take out the ginger if you don’t like it, basically have fun mixing more or less of these spices.
TIPS FOR HOMEMADE SPICE MIX
- Always store spices in airtight containers, to retain the taste.
- Use a paper towel to make “funnel” when pouring spices into containers, to avoid spillage.
- When you use a grinder to blend spices together, always step aside before opening, so you don’t inhale and choke on the spice mix.
